Although I can live solely on crackers, it never occurred to me to actually make them from scratch. So, when I came across February Daring Bakers' challenge, I just could not resist. Since I am particularly fond of rice crackers, I was tempted by Tes's recipe here.



Sarah from All Our Fingers in the Pie was our February 2013 Daring Bakers’ host and she challenges us to use our creativity in making our own Crisp Flatbreads and Crackers!
 
I started off by changing the recipe as I went along.... and from the beginning, it was clear that something was off. The dough was to soft and I kept adding flour as needed and then substituted sesame seeds for nori. Low and behold, my crackers looked nothing like the beautiful Tes's creations and I am pretty sure that they did not taste anything like hers either. But nonetheless, they were crunchy and delicious. Rice Crackers

1 1/2 cup brown rice flour

2 tsp baking powder

1 cup boiling water

1 tbsp oil

1 tsp sesame oil

1/2 tsp salt or to taste

sesame seeds

Preparation:

  1. Sift flour and baking in the mixing bowl, add salt, and stir well.
  2. Add boiling water and stir to form stiff dough. Let the dough to cool down, add oil and sesame oil, and knead for 3 minutes. 
  3. Roll dough into thin sheets.
  4. Bake the rice flour sheets in the preheated oven at 180 degree C for 5 until golden brown. Remove from the oven, let it cool, and serve.

  1. Oh I never even thought to make rice crackers, I will have to pin this recipe to try, these look so nice, they look just like store bought ones!!! You have done such a great job with the challenge.
